Mamounieh is the dessert that serves as the iconic Syrian breakfast. It consists of a roasted semolina cream that comes straight from Aleppo, Syria and is rarely found anywhere else in the world. Mamounia, also called mamouniye, mamounia or mamouniyeh, is served for breakfast but it is also served at weddings and special occasions.







INGREDIENTS


1 Cup Farina

3/4 to 1 Cup Sugar

1/2 Stick Butter

5 1/2 Cups Water


Cinnamon to add on top

-Your choice of Sweet Cheese.

you can use String Cheese,

Mozarella, or Akawi


FOLLOW ME


-Cook the water, sugar and the farina at the same time.

-In a pot, boil your water and sugar

-At the same time, in a separate pot add your butter and your farina,

keep an eye on the farina, mixing constantly until light brown.

-Add your farina to your boiling water, keep mixing until thick


-To pour individual bowls:

1- Add your cheese on the bottom

2- Add your Mamounieh

3- Add more cheese on top

4- Sprinkle with cinnamon

5- Mix to melt the cheese and dig in.

Tiskieh or Tasqia is a popular dish that is famous for the Levant ( Syria , Jordan , Lebanon , Palestine ), consisting of chickpeas , ‌ bread, and ‌ milk . Tasqia is one of the most popular dishes due to its low costs.








INGREDIENTS


- 2 to 3 Cups Chickpeas

-Desired Amount of cut Pita Bread

1 1/2 tbsp Cumin

1 tbsp Minced garlic



1/4 tsp Aleppo Pepper

1/2 Cup Pompeian EVOO (Robust)

1 tsp Salt ( keep tasting )

1/4 tsp Illi ( Soda Crystals )

Parsley for garnish


FOLLOW ME


- Boil the chickpeas and save the broth for use

-In a bowl add about 4 ladles of broth, mix in the ( Illi ),

add in the blender and mix well

-Add in your oil and blend until the mixture turns white ( Fakseh )


-Let’s build the Tiskieh:

-In a serving dish, add your pita bread on the bottom, garlic, cumin, salt,

a couple of ladles of chickpeas with broth, mix to soften the bread

-Add your desired amount of chickpeas with broth, then add in some of

the blended sauce.

-Sprinkle with cumin and Aleppo pepper, and garnish with some parsley

Stuffed squash, courgette, marrow, mahshi, or zucchini is a dish of the region of the former Ottoman Empire from the Balkans to the Levant and Egypt, a kind of dolma. It consists of various kinds of squash or zucchini stuffed with rice or bulgar, Ground meat and cooked on the stovetop or in the oven. The meat version is served hot, as a main course. The meatless version is considered an "olive oil dish" and is often eaten at room temperature or warm.










INGREDIENTS


Desired amount of Zucchini

and or mixed vegetables.

Empty the center, soak with water

and salt then rinse.




Zucchini Spices:


1 1/2 Ground Beef

1 1/4 Cup Short Grain Rice

1 tbsp Ground Mint

1 tbsp Mild Pepper Paste

1 tsp Minced Garlic

3/4 tbsp All Spice

1 tsp Salt ( keep tasting )

1/4 Cup Olive Oil

1 Diced Tomato

2 Full tbsp Tomato Paste

--Your choice of meat to add with the Koussa mahsi, i used Ribs.


FOLOW ME


-Soak the rice with salt and water for about an hour, wash and rinse.

-Mix your ground beef with rice and all your spices. mix well and start

stuffing the zucchini and your vegetables.


-Sautee the ribs w/ some butter, when done add:

water, 5 bay leaves, piece of nutmeg, 10 pepper corns, 1 tsp salt, 1 onion cut in half.


-Don't forget about Teta's (grandma's) famous egg shells.

( When using for omelets or other egg uses, just tap the top of eg to empty the eggs,

wash with soap and water and keep in your panty for your next Mahshi dish.


-Build your pot, add your meat. You can also add round cut potatoes or tomatoes, then

start adding your stuffed zucchini and all the vegetables.


Zicchini Sauce:

It depends on how big is your pot and the amount of vegetables:

-Add 4 to Cups of Water, 1 tbsp Ground Mint, 1 tbsp Minced Garlic, 1/2 Cup Lemon Juice.

1 tbsp Salt ( keep tasking ), 4 to 5 Full tbsp Tomato Paste, mix it well, taste it and add it to your koussa pot.


-Add a weight on your pot ( pot cover, or plate upside down )

-Let boil, when boils for 10 min, taste the salt, lemon and mint, cover and

let boil for about 1 1/4 hr.


-Uncover, taste again, if done let sit, you can carefully drain the sauce, take out the

zucchini and vegetables and the meat, add them to a serving plate.
